HONEY SPICE CAKE
This is a delicious cake and it only uses one bowl for the batter
4 eggs
1 scant cup sugar
1 ounce whiskey
1 teaspoon ground allspice
1 tart apple, grated
½ cup corn oil
1 cup honey
1½ teaspoons orange zest
1/3 cup strong coffee
Scant ¼ cup orange juice
2 2/3 cups all-purpose flour
4 teaspoons baking powder
2 teaspoons baking soda
1½ cups raisins
1/3 cup ground walnuts
Preheat oven to 350°F (180°C).
Combine all ingredients in the bowl of an electric mixer and beat at medium speed until well blended. Bake in a large greased tube pan for 50 minutes or until a toothpick inserted comes out clean.
This cake freezes well.
