RED GAZPACHO


ingredients


1 red capsicum, cut into pieces
1-3 onion cloves, crushed
3 slices of white bread, crusts removed
1.5kg ripe tomatoes, peeled
6 tbsp sherry or white wine vinegar
5 tbsp extra virgin olive oil
salt and pepper, to taste
1-2 tspn sugar, or to taste

Garnish
12 ice cubes
1 medium cucumber, peeled and finely diced
1 red onion, chopped
1 green capsicum, finely diced


method


Puree capsicum in food processor. Add rest of soup ingredients and blend to a smooth cream, adding a little water if necessary. Chill, covered in refrigerator. To serve, add 2 ice cubes to each bowl, and offer garnish on a separate plate. Serves 6.
